**PRIMARY PURPOSE:**
As a Butcher, you will set the stage for guest experience with your culinary talents by attending to guests’ meat preparation needs including selection, advice, butchering, weighing, grinding, and packaging. By understanding the guest’s unique stories and needs, you will own their experience to create WOW memories they will carry with them far and beyond their time with us.
**PRINCIPAL DUTIES AND RESPONSIBILITIES:**
+ Assists guests with meat selection, and shares knowledge of preparation and cooking techniques
+ Chops, dices, slices, grinds, cuts on the band saw or otherwise, and butcher’s meats according to guest instructions
+ Weighs, labels and packages meats
+ Displays and stores food in the appropriate temperature conditions as per Department of Health standards
+ Stocks counter neatly, accurately, and in a timely manner as per pricing menus, and promptly informs management when meat quantities or supplies are low
+ Maintain a clean workstation
+ Maintain a professional, neat, and well-groomed appearance, adhering to MGM Resorts International standards
**MINIMUM REQUIREMENTS:**
+ High School Diploma or equivalent
+ One (1) year of experience as a butcher or a similar role
+ Work varied shifts, including weekends and holidays
**PREFERRED:**
+ Previous experience in a high-volume restaurant environment
+ Previous experience working in a similar resort setting
